TITLE CRETON #3 /Pork Spread
(pronounced: cre-tohn, the 'n' is almost silent.)
HISTORY This recipe is one from the Madawaska Historial Society's REUNION FAMILIES' FAVORITE RECIPES. This recipe serves 6 to 8.
INGREDIENTS
  • 5-6 lbs pork
  • 2 onions
  • water
  • flour
  • seasoning to taste (allspice, cloves, cinnamon and nutmeg)
PREPARATION Boil pork, with water (enough to cover the meat), onions, salt and pepper. When tender, remove from pot and save broth. Also remove excess fat. Debone the pork and pass it through the meat grinder or food processor. Mince more onions and add to chopped meat and juice. Add a little flour to thicken the mixture along with the spices. Stir until all is well mixed. Place in a cool place or refrigerate until ready to serve.
