NOTRE CUISINE ACADIENNE...

TITLE OYSTERS, MOCK FRIED
HISTORY This recipe is one from down Louisiana-way. It comes from our dear friend, MizMo (Aline Theriot Meaux). 
INGREDIENTS
  • 1 set of fresh calf brains, soaked in cold, salted water
  • 1 cup flour
  • 1 cup yellow cornmeal
  • Red pepper to taste
  • oil to deep-dry
PREPARATION Carefully remove all membrane and cut into oyster-sized pieces. Mix flour, cornmeal and red pepper in bowl. Dredge pieces of brain in meal mixture, being sure to coat each piece well. Deep fry, a few pieces at a time, as you would oysters, until golden brown.
