TITLE SOUP AUX PATATES / Potato Soup
(pronounced: soup oh pa-tat)
HISTORY This recipe is one from the Madawaska Historial Society's REUNION FAMILIES' FAVORITE RECIPES. Copies of the cookbook may be ordered directly from the Historical Society, Madawaska, Maine 04756. This recipe is a Pelletier Family Reunion recipe which comes from Gertrude J. Picard. 
INGREDIENTS
  • 1/2 cup salt pork, cut up in 1/4-inch cubes
  • 3 tablespoon salted herbs (des herbes salé)
  • 1 qt. potatoes, cut in 1/2-inch cubes
  • 3 qt water 
  • salt and pepper
  • dash of parsley (Mille feuille, a wild herb not found in stores)
  • flour to thicken broth
PREPARATION Fry salt pork in cast-iron pot; drain fat, leaving about 2 tablespoons in pot. Add salted herbs, water, salt, pepper, parsley and Mille feuille (if you can find some). Cook on a medium heat for 20 to 30 minutes, or until the potatoes are cooked. Thicken with flour by making a thin paste and stir into the soup.
