TITLE TARTE AUX RAISINS / Raisin Pie

HISTORY This recipe is one from the Madawaska Historial Society's REUNION FAMILIES' FAVORITE RECIPES. Copies of the cookbook may be ordered directly from the Historical Society, Madawaska, Maine 04756. This recipe is a Hebert Family Reunion recipe which comes from Anne Parent Roy. 
INGREDIENTS
  • 2-1/2 cups raisins (seedless)
  • 6 cups boiled water
  • 3/4 cup sugar
  • 5 tablespoon cornstarch
  • water from raisin mixture
  • 3 tablespoon lemon juice
PREPARATION Put raisins, boiled water and sugar in a pan and cook for 5 minutes. Thicken the raisin mixture with cornstarch. Use water from the raisin mixture to make a paste like mixture of cornstarch. When the raisins are boiling, add the cornstarch to thicken. Add lemon juice to the mixture. Pour in 9-inch pan with pie crust and cover with another pie crust. Bake at 400degrees until crust is golden, 30-40 minutes. Makes two pies.
