PREPARATION | Wash, scrape and wash again. Cover with boiling water. Add salt and pepper. Simmer for 6 hours or until they start to fall apart and the liquid has diminished to 1-inch from bottom of pan. Add 1 more cup of water and add small onion, peeled potatoes and carrots. Cook on a low fire until the vegetables are cooked and tender. There should be a good amount of liquid to serve with the meal and in which to dip your bread or ployes. |
