TITLE PIGS' FEET BOILED DINNER
HISTORY This recipe is one from the Madawaska Historial Society's REUNION FAMILIES' FAVORITE RECIPES. Copies of the cookbook may be ordered directly from the Historical Society, Madawaska, Maine 04756. This recipe is a Bouchard Family Reunion recipe which comes from Simone Chasse Bouchard. 
INGREDIENTS
  • 4 pigs feet 
  • water to cover feet
  • 4 medium size potatoes
  • 1 small onion
  • 1-1/2 tablespoon salt
  • pepper to taste
  • 4 medium size carrots
PREPARATION Wash, scrape and wash again. Cover with boiling water. Add salt and pepper. Simmer for 6 hours or until they start to fall apart and the liquid has diminished to 1-inch from bottom of pan. Add 1 more cup of water and add small onion, peeled potatoes and carrots. Cook on a low fire until the vegetables are cooked and tender. There should be a good amount of liquid to serve with the meal and in which to dip your bread or ployes.
