TITLE PLOGUES  #4 (Elsie's Recipe)
(pronounced and sometimes spelled: ploye)
HISTORY
INGREDIENTS
  • 2 cups of buckwheat flour
  • 3 tablespoons of white flour
  • 1 teaspoons of baking soda (preferably Rumford if you have it)

  • 1 teaspoon of salt
    PREPARATION Preparation. Mix the flour ingredients in a large bowl, with cold water (about 1-1/2 cup) until the consistency of cake batter. Add salt and 1/2 cup of hot (not boiling) water on the salt and mix well to make a light batter. Pour enough batter from your bowl on to a very hot griddle, to make a 6 to 9  inch pancake. Do not turn over. The plogue is done when the top is cooked but still moist. Remove plogue to a warm plate. Put a clean cloth over the stack of plogues to keep warm. Serve hot.
