HISTORY This recipe is one from A.J. Michaud's AN ACADIAN HISTORY FROM THE ST. JOHN VALLEY. . This recipe is one that Mr. Michaud named "Frenchville Buckwheat Pancakes'. 
INGREDIENTS
  • 1 cup buckwheat flour
  • 1 cup white flour (all purpose flour)
  • 2 heaping teaspoons Davis Baking Powder (double-acting)
  • 1 heaping teaspoon salt
PREPARATION Dilute all ingredients in cold water until thick;
Add 1 cup boiling water, stirring;
Add more water if still too thick;
Add 1 full tablespoonful of cider vinegar.

Set electric frying pay to 420 degrees.
Spoon batter to six inch diameter pancake and let cook.
