TITLE SOUP AUX POIS #2 / Old Fashion Pea Soup

HISTORY This recipe is one from the Madawaska Historial Society's REUNION FAMILIES' FAVORITE RECIPES. Copies of the cookbook may be ordered directly from the Historical Society, Madawaska, Maine 04756. This recipe is a Hebert Family Reunion recipe which comes from Edna Hebert. 
INGREDIENTS
  • 1 lb. dried green peas
  • 1/2 lb salt pork
  • 2 carrots
  • 1/2 cup finely chopped parsley
  • 1 tablespoon salt to taste
  • 1/3 teaspoon pepper to taste
  • 2-3/4 quart (12 cup) water
  • 3 medium onions
  • 2 or 3 bay leaves
  • 1 teaspoon savory
PREPARATION Wash and drain peas. Combine in a large kettle, the pork, water, onions, finely chopped, cubed carrots, bay leaves, parsley and savory. Bring to a boil for 2 minutes. Remove from heat and let stand for one hour. Return to fire and once more bring to a boil. Lower heat and let simmer for 1-1/2 hours or until the peas are cooked. Add salt and pepper. To purée (optional), put through colander or blender. Makes 8 servings. Serve with hot ployes or hot soda biscuits.
