TITLE POUTINE AU CHAUMEUR
HISTORY This recipe is one from the Madawaska Historial Society's REUNION FAMILIES' FAVORITE RECIPES. Copies of the cookbook may be ordered directly from the Historical Society, Madawaska, Maine 04756. This recipe is a 1985 Bicentennial Families recipe which comes from Jackie Duperre. 
INGREDIENTS Sauce:
  • 1-1/2 cup maple syrup or brown sugar
  • 2 drops maple flavoring
  • 3/4 cup water
  • 2 tablespoon butter or margarine
Cake:
  • 1 cup all-purpose flour
  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 tablespoon shortening or oil
  • 1 beaten egg
  • 1/2 cup milk
PREPARATION Sauce: Mix all ingredienets and bring to a boil on a medium heat fire. Remove from heat and stir.

Cake: Mix sugar and shortening; add egg and flour gradually. Add baking powder and milk; mix until all lumps are dissolved. Pour into a greased 8x8-inch baking pan.

Pour the sauce over the cake, it will seep through the cake mixture. Bake 30 minutes in a 350 degree oven or until cake springs clean of toothpick.
