TITLE SALAD DE PANSE  /Tripe Salad
(pronounced: sa-lad duh pahnse)
HISTORY This one from our good Cajun friend, MizMo.
INGREDIENTS
  • 1-1/2 pounds tripe
  • 1 large onion, sliced thin
  • 1 toe garlic, minced
  • 1 cup white vinegar
  • salt, red and black pepper
  • PREPARATION Boil tripe until very tender, cut into bite-size pieces.  Place in bowl and add sliced onion, minced garlic, salt and peppers, and the cup of vinegar.  Allow to marinate about 4 hours in refrigerator before serving.
