PREPARATION | Wash and cut partridges into pieces and set aside. In a skillet, brown the pork and remove. Add the partridge pieces and brown also. Sauté onions in the butter; blend in flour and mix well. Add water, salted herbs, salt and pepper. Put in partridge pieces and simmer for 1 hour. Add potatoes and let cook for 20 more minutes. Serve with ployes. |
