NOTRE CUISINE ACADIENNE...

TITLE STEW, PARTRIDGE
HISTORY This recipe is one from the Madawaska Historial Society's REUNION FAMILIES' FAVORITE RECIPES. Copies of the cookbook may be ordered directly from the Historical Society, Madawaska, Maine 04756. This recipe is a Plourde Family Reunion recipe which comes from Bertle Plourde. 
INGREDIENTS
  • 1 large or 2 small partridges
  • 1 tablespoon flour
  • herbes salées
  • 1 cup diced pork fat
  • salt and pepper to taste
  • 2 chopped onions
  • 2 tablespoon butter
  • 4 cups diced potatoes
  • 10 cups water
PREPARATION Wash and cut partridges into pieces and set aside. In a skillet, brown the pork and remove. Add the partridge pieces and brown also. Sauté onions in the butter; blend in flour and mix well. Add water, salted herbs, salt and pepper. Put in partridge pieces and simmer for 1 hour. Add potatoes and let cook for 20 more minutes. Serve with ployes.
