TITLE TOURTIÈRE, MOM SAVOIE'S

HISTORY This recipe is one from the Madawaska Historial Society's REUNION FAMILIES' FAVORITE RECIPES. Copies of the cookbook may be ordered directly from the Historical Society, Madawaska, Maine 04756. This recipe is a 1985 Bicentennial Families recipe which comes from Jacqueline Albert Savoie. 
INGREDIENTS
  • pastry for 9-inch 2 crust pie
  • 1 lb lean ground pork
  • 1/2 cup finely chopped onion
  • 1 medium mashed potato
  • dash of cinnamon
  • dash of pepper
  • 1 cup water
  • 1/2 cup bread crumbs
  • 1/3 teaspoon ground safe
  • dash of nutmeg and cloves
  • 1 teaspoon salt
PREPARATION Preheat oven to 375 degrees F. Brown ground pork in a large skillet; drain off excess fat. Stir in onion, water, bread crumbs, potato and spices. Simmer about 20 minutes, until onion is tender, stirring often. Place meat mixture in a 9-inch crust, top with another crust, seal and flute. Cut slits on top to let out steam. Bake for 40 minutes. Good eaten hot or can be frozen and eaten at a later date.
